Air Fry Chorizo, Halloumi and Tomato Ciabatta

The air fryer cooks the chorizo to perfection, rendering out its rich and spicy flavours while retaining a juicy interior. The halloumi adds a salty kick and satisfying chewiness that contrasts beautifully with the crunchy ciabatta bread. Ingredients

  • 120g halloumi
  • 2 tbsp olive oil
  • 1 red onion, sliced
  • 250g cherry tomatoes
  • 2 peppers
  • 100g sliced cooking chorizo
  • 1 ciabatta

Method

  1. Slice the halloumi into 0.5cm pieces and coat them in a bowl with 2 tablespoons of olive oil. Allow the halloumi to marinate.
  2. Combine the onion, cherry tomatoes, and peppers on a baking tray that fits the air fryer, then top with chorizo. Drizzle with olive oil and sprinkle with sea salt flakes. Air fry for 10 minutes at 200°C.
  3. Add the marinated halloumi to the tray. Continue cooking for an additional 5 minutes before removing from the fryer.
  4. Slice open the ciabatta open and stuff with the filling.
