Ingredients

  • 2 chicken breasts,
  • 2 tbs olive oil,
  • 2 tbs chipotle sauce,
  • 1 tsp cumin,
  • 1 tsp garlic powder,
  • Salt and pepper,
  • 4 large flour tortillas,
  • 1 cup cooked rice,
  • 1 cup black beans, drained,
  • 1 cup corn,
  • 1 avocado, sliced,
  • 1 cup grated cheese,
  • fresh coriander

Method

  1. Mix olive oil, chipotle sauce, cumin, garlic powder, salt, and pepper. Add the chicken breasts, ensuring they are well coated. Cover and marinate for at least 30 minutes (or up to 2 hours in the fridge).,
  2. Preheat your air fryer to 200°C (390°F).,
  3. Cook the marinated chicken for 6-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let it rest for a few minutes before slicing.,
  4. On each tortilla, layer a scoop of rice, black beans, corn, sliced avocado, and shredded cheese. Top with sliced chicken and sprinkle with fresh cilantro.,
  5. Fold in the sides of the tortilla and roll it up tightly from the bottom to create a burrito. Repeat with the remaining tortillas.,
  6. Serve the burritos warm with lime wedges on the side.
