A lovely, hearty Winter soup.
Ingredients
- unsalted butter
- 4 leeks, chopped
- 1 celery stick, chopped
- 1kg potatoes, peeled and diced
- 1 sprig fresh thyme
- 1 litre water
- sea salt
- 125ml cream
- black pepper
Instructions
- Begin by sautéing the leeks and celery in the cooker pan with a knob of butter. Add in the potatoes, a sprig of thyme, and the water.
- Secure the cooker lid and set it to cook on high for 15 minutes, then release the pressure quickly.
- Once the cooking cycle is finished, discard the thyme and use a blender to puree the soup until it reaches a smooth consistency.
- Finish by stirring in a splash of cream and seasoning to taste with salt and freshly ground black pepper. Enjoy this delicious and comforting soup.
