Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 1/2 cups panko breadcrumbs
- Cooking spray, for the air fryer
- 1 tablespoon vegetable oil
- 1 onion, thinly sliced
- 2 carrots, peeled and sliced
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 tablespoon flour
- 1 1/2 cups chicken or vegetable broth
- 1 tablespoon soy sauce
- 1 tablespoon honey
- Cooked white rice, for serving
- Fresh chopped parsley, for garnish (optional)
Instructions
- Preheat your air fryer to 400°F (200°C).
- Start by preparing the chicken breasts. Pound the chicken breasts slightly to an even thickness, then season both sides with salt and pepper.
- Set up a breading station: place the flour, beaten eggs, and panko breadcrumbs in three separate shallow bowls.
- Start by coating the chicken breasts in flour, shaking off any excess. Then dip them into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken breasts with the panko breadcrumbs, pressing them lightly to adhere.
- Lightly spray the air fryer basket with cooking spray. Place the breaded chicken breasts in the basket, being careful not to overcrowd. You may need to cook them in batches if your air fryer is small.
- Cook the chicken in the air fryer for about 10-12 minutes, flipping halfway through, until they are golden brown and cooked through. The internal temperature should reach 165°F (74°C).
- While the chicken is cooking, start preparing the curry sauce. Heat vegetable oil in a saucepan over medium heat. Add the sliced onions, carrots, and minced garlic. Sauté until the vegetables are tender, about 5 minutes.
- Stir in the curry powder and flour, and cook for an additional 1-2 minutes until fragrant.
- Gradually whisk in the chicken or vegetable broth, soy sauce, and honey. Bring the mixture to a simmer and cook for about 5 minutes, stirring occasionally, until the sauce thickens.
- Once the chicken is cooked, remove it from the air fryer and slice into strips.
- Serve the air fryer chicken katsu with the curry sauce over a bed of cooked white rice. Garnish with fresh chopped parsley if desired.
