Ingredients
- 4 tablespoons butter, softened
- 2 tablespoons chopped fresh flat-leaf parsley
- 1 clove garlic, minced
- 1 teaspoon salt
- 2 skinless, boneless chicken breast halves, pounded to 1/4-inch thickness
- Salt and ground black pepper to taste
- 1/2 cup all-purpose flour
- 1 large egg, beaten
- 1 cup panko bread crumbs
- 1 teaspoon paprika
- Nonstick cooking spray
Instructions
- Mix butter, parsley, garlic, and 1 teaspoon salt together in a bowl until thoroughly blended.
- Shape herbed butter into two equal balls and freeze for 10 minutes.
- Season chicken with salt and pepper. Place a butter ball in the center of each chicken breast and fold sides up around the butter mixture.
- Freeze chicken for 30 minutes.
- Preheat air fryer to 200°C (400°F).
- Set up three shallow bowls for breading: flour in the first, egg in the second, and a mix of panko and paprika in the third.
- Dredge each chicken breast in flour, then egg, and finally in panko mixture.
- Place breaded chicken in the air fryer basket and spray with nonstick spray.
- Air-fry for 5 minutes, spray again, and cook for another 5 minutes or until the chicken is no longer pink in the center and the juices run clear.
