ingredients
- For the Tostones:,
- – 2 green plantains,
- – Salt, to taste,
- – Olive oil or cooking spray,
- For the Coriander Dip:,
- – 1 cup fresh coriander leaves,
- – ½ cup Greek yoghurt or sour cream,
- – 1 clove garlic,
- – 1 tbs lime juice,
- – Salt, to taste,
method
- Peel the green plantains. Slice them into 1-inch thick pieces.
- Preheat the air fryer to 200°C (390°F).
- Lightly coat the air fryer basket with olive oil or cooking spray.
- Place the plantain slices in the basket, ensuring they are not overcrowded. Cook for about 8-10 minutes until they are tender but not browned.
- Remove the plantains from the air fryer. Using a flat surface, such as the bottom of a plate, gently smash each piece to flatten it, making them about 1/2 inch thick.
- Return the flattened plantains to the air fryer. Lightly brush or spray with oil and sprinkle with salt. Air fry for an additional 6-8 minutes or until golden and crispy.
- Making the Cilantro Dip:
- In a blender or food processor, combine cilantro, Greek yoghurt (or sour cream), garlic, lime juice, and a pinch of salt. Blend until smooth.
- Taste and adjust seasoning as needed. If you prefer a thinner consistency, add a little water or extra lime juice.
💡 Serve the crispy tostones hot with the cilantro dip on the side. Enjoy your delicious snack!,
