ingredients

  • For the Tostones:,
  • – 2 green plantains,
  • – Salt, to taste,
  • – Olive oil or cooking spray,
  • For the Coriander Dip:,
  • – 1 cup fresh coriander leaves,
  • – ½ cup Greek yoghurt or sour cream,
  • – 1 clove garlic,
  • – 1 tbs lime juice,
  • – Salt, to taste,

method

  1. Peel the green plantains. Slice them into 1-inch thick pieces.
  2. Preheat the air fryer to 200°C (390°F).
  3. Lightly coat the air fryer basket with olive oil or cooking spray.
  4. Place the plantain slices in the basket, ensuring they are not overcrowded. Cook for about 8-10 minutes until they are tender but not browned.
  5. Remove the plantains from the air fryer. Using a flat surface, such as the bottom of a plate, gently smash each piece to flatten it, making them about 1/2 inch thick.
  6. Return the flattened plantains to the air fryer. Lightly brush or spray with oil and sprinkle with salt. Air fry for an additional 6-8 minutes or until golden and crispy.
  7. Making the Cilantro Dip:
  8. In a blender or food processor, combine cilantro, Greek yoghurt (or sour cream), garlic, lime juice, and a pinch of salt. Blend until smooth.
  9. Taste and adjust seasoning as needed. If you prefer a thinner consistency, add a little water or extra lime juice.

💡 Serve the crispy tostones hot with the cilantro dip on the side. Enjoy your delicious snack!,
