Pressure Cook Sesame Chicken And Tofu

This is a delicious and convenient dish that blends tender chicken pieces with soft tofu in a rich, savoury sesame sauce. The chicken is juicy and succulent, while the tofu is soft and absorbs the flavours beautifully.

Ingredients

  • 2 tbs sesame oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbs fresh ginger, grated
  • 2 cubed chicken breasts
  • 200g firm tofu, cubed
  • 2 tbs soy sauce
  • 1 tbs rice vinegar
  • 1 tbs honey
  • 1 tbs sesame seeds
  • 1 cup chicken/vegetable stock
  • Salt & pepper
  • Fresh spring onions

Method

  1. Set your pressure cooker to the sauté mode and add sesame oil. Once hot, add the diced onion and cook until soft and translucent.
  2. Stir in the minced garlic and grated ginger. Cook for about a minute until fragrant.
  3. Add the chicken breast pieces and cubed tofu, cooking until the chicken is lightly browned on the outside.
  4. Stir in the soy sauce, rice vinegar, and honey. Sprinkle in the sesame seeds and mix everything well.
  5. Pour in the chicken or vegetable stock and season with salt & pepper to taste.
  6. Secure the lid on the pressure cooker and set to high pressure. Cook for about 10 minutes.
  7. Once the cooking time is up, allow the pressure to release naturally for about 5 minutes, then carefully release any remaining pressure manually using the quick-release method.

💡 Ladle the sesame chicken and tofu into bowls and garnish with fresh chopped spring onions. Serve hot.
