Ingredients
- 2 tbs sesame oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbs fresh ginger, grated
- 2 cubed chicken breasts
- 200g firm tofu, cubed
- 2 tbs soy sauce
- 1 tbs rice vinegar
- 1 tbs honey
- 1 tbs sesame seeds
- 1 cup chicken/vegetable stock
- Salt & pepper
- Fresh spring onions
Method
- Set your pressure cooker to the sauté mode and add sesame oil. Once hot, add the diced onion and cook until soft and translucent.
- Stir in the minced garlic and grated ginger. Cook for about a minute until fragrant.
- Add the chicken breast pieces and cubed tofu, cooking until the chicken is lightly browned on the outside.
- Stir in the soy sauce, rice vinegar, and honey. Sprinkle in the sesame seeds and mix everything well.
- Pour in the chicken or vegetable stock and season with salt & pepper to taste.
- Secure the lid on the pressure cooker and set to high pressure. Cook for about 10 minutes.
- Once the cooking time is up, allow the pressure to release naturally for about 5 minutes, then carefully release any remaining pressure manually using the quick-release method.
