Ingredients
For the filling:
- 1 cup cooked chicken, ham, or seafood (like shrimp or fish), finely chopped
- 1 small onion, finely chopped
- 2 tablespoons olive oil or butter
- 1 cup milk
- 1 cup chicken or vegetable broth
- 1/2 cup all-purpose flour (plus extra for coating)
- Salt and pepper to taste
- Nutmeg (optional, a pinch)
- Fresh parsley, chopped (optional)
For breading:
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 2 eggs, beaten
Method
- In a skillet, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the chopped meat or seafood and cook for a few minutes.
- Add the flour and stir well to combine, cooking for about 1-2 minutes.
- Gradually add the milk and broth, stirring constantly until the mixture thickens. Season with salt, pepper, and nutmeg. If using, add chopped parsley.
- Once thickened, transfer the mixture to a bowl and let it cool completely in the refrigerator for at least 1-2 hours.
- Once the filling is cool, scoop out small portions and shape them into small logs or balls.
- Roll each croqueta in flour, then dip it in the beaten eggs, and finally coat it with breadcrumbs.
- Cook at 190°C (375°F) for 15 mins until crispy, turning occasionally.
- Once cooked, remove the croquetas from the air fryer and let them cool slightly before serving.
💡 They are delicious on their own or served with a dipping sauce like aioli or a spicy mayo.
